Once on board, your host pours you a glass of the JCB #21 Brut sparkling to accompany your first course on the Wine Train: a tower of local cheeses and artisan charcuterie, tapenades, and crostinis. What a welcome!

Explore Raymond Vineyards from the inside out. First, a short tour of the Theater of Nature, to discover organic and Biodynamic farming. Learn about the interplay between the soil, the vines and other plants, animals, and the vineyardist as a holistic system in harmony with the calendar and the moon. Does it make a difference? Just like a typical working cellar. Except for all of the gorgeous Baccarat chandeliers dripping from the ceilings and the extraordinary collection of historical crystal decanters. The Crystal Cellar showcases the vineyard’s finest wines, and for you, amidst the glow of the crystals and steel, and glass, a tasting of Raymond Vineyard’s Estate Sauvignon Blanc and a tour.
Tour the estate’s blending room to see a day in the life of a winemaker, learning the art of winemaking. Get a glimpse of the place where vineyard guests can experiment and blend their own red wine creations. And even take home a bottle of their own special blend.
After exploring these exquisite spaces, you’ll be escorted to Le Cabaret, where a two-course dinner awaits. First, local Petrale sole with celery root purée and herb salad lemon caper brown butter, paired with Raymond’s Generations Chardonnay. Then, lemon thyme roasted striploin, with wild mushrooms, estate braising greens, and Bordelaise, accompanied by a limited production Cabernet Sauvignon from their District Collection.
